Healthy Blueberry Muffins

Treating yourself or wanting to eat something fattening doesn’t mean you actually have to. You can almost manipulate anything into a healthy version. I empathize on almost because there’s no such thing as “healthy” fried chicken, no way.

But…. you can make healthy muffins no problemo! See below for the ridiculously quick and easy recipe.

Grab:
2 cups gluten free flour or almond flour or coconut flour (use either one)
2 tbsp Olive oil
2 tbsp natural honey or any natural sweetener
4 eggs
Coconut oil (to grease the muffin tins)
1/2 tsp Himalayan salt
1/2 tsp Baking soda
Fresh or frozen blueberries. (if using frozen wait for them to defrost and let out most of the water).

Makes 10-12 muffins, depending on the size you make them.

Mix the dry ingredients together in one bowl. Mix the wet ingredients in another and then slowly fold the 2 mixtures together.

Add in your blueberries, mix gently. I used both fresh and frozen.

Using a spoon, scoop the batter into the coconut oil lined muffin tins. You can also skip the coconut oil and use muffin liners. Bake for just about 20 minutes or until the tops are golden.
